From the grill
Grilled sardines
Small fish, short cooking time — the easy classic at anchor.

Ingredients
Method
- 1
Rinse the sardines in cold water and pat dry. Rub the hot grill grate with half a garlic clove and oil it thinly.
- 2
Brush the fish thinly with oil and place close together on the grate. Grill over medium heat for 3–4 minutes per side, turning only once.
- 3
Peel the top skin off any sardines whose skin has browned too much. Drizzle with sea salt, lemon juice and parsley.
- 4
Serve immediately while hot with lemon wedges and bread. Sardines taste best on the day they are bought.
Galley tip
Sardines spoil extremely fast: serve them straight off the grill and never leave them out on deck overnight.
Do not cook in heavy seas. Secure the stove and pot, use drinking water and keep perishables refrigerated.
