Tuna steak with lemon
Short, hot cooking time with a dressing of lemon, garlic and rosemary.

Ingredients
Method
- 1
Stir oil, lemon juice, pressed garlic, rosemary and chilli flakes together in a bowl. Turn the steaks in it, cover and leave for 15 minutes in a cool place.
- 2
Heat the grill until really hot. Lift the steaks out of the marinade and let them drain briefly; oil the grate.
- 3
Grill over high heat for 3–4 minutes per side. To cook the fish right through — for children and pregnant people — grill 5–6 minutes per side until no pink remains inside.
- 4
Let the steaks rest for 2 minutes, cut into strips and serve with the juices that have run out.
Galley tip
Serve tuna half raw only if it is very fresh and has been kept cold throughout. Without refrigeration, always cook it thoroughly.
Do not cook in heavy seas. Secure the stove and pot, use drinking water and keep perishables refrigerated.
